Choose between the following entrees:

 

· Enchiladas-beef or chicken mixed with chilies, spices and smothered in enchilada sauce

· Burritos-beef or pork burritos made with a bean and cheese mixture, served with sour cream, cheese and salsa

· Southwest Lasagna Rolls – lasagna made with seasoned beef, green chilies and Mexican cheese blend

· Mexican Spaghetti – spaghetti with Mexican style sauce including onion, black beans, tomatoes, corn and green chilies

· Black Bean Tortilla Pie – flour tortillas filled with black beans, onion, peppers, corn and cheese, baked and cut into wedges

· Taco Bar-taco meat served with tomatoes, peppers, olives, cheese, sour cream and onions

 

Choose between the following side dishes:

 

· Chips and Salsa-tortilla chips served with salsa

· Southwestern Macaroni Salad – macaroni mixed with tomatoes, peppers, onion, olives and a dressing

· Salsa Corn Muffins – muffin mix combined with corn, cheese, pimientos and salsa and baked

· Mexicali Cornbread Squares – cornbread topped with refried beans, olives, peppers, tomatoes, cheese and sour cream cut into squares
